Longhorn Steakhouse Rice Pilaf Recipe

Rice pilaf takes everyday rice and takes it to the next level. In this recipe, the rice is cooked until fluffy and then pan-fried for added crunch. Ingredients
- 1.5 cups dry white rice
- 2 cups chicken broth or chicken stock
- 2 tablespoons Olive Oil or Avocado Oil
- 1/4 cup finely diced red bell pepper
- 2 tablespoons finely diced onion
- 1 Tablespoon parsley
- Salt and pepper, to taste

- Skillet or medium sauce pan
Instructions
- Cook rice using the desired method, but use chicken broth instead of water.
- Cover the bottom of a hot skillet with about 2 tablespoons of cooking oil.
- Add the red pepper, onion, and pan fry until they are nice and shriveled (about 10 minutes or medium heat).
- Add the cook riced and fry with the red peppers and onion. Add more oil if necessary.
- Add parsley, salt, and pepper to taste, and cook for a minute or two longer.
