- Place potatoes in a pot and cover with 2″ of salted water – bring to a boil and cook until tender (about 10-15 minutes). Alternatively, you can keep the potatoes whole and bake them in the oven.
- Once the potatoes are cooked, transfer to a large bowl
- Add butter and sour cream and mash with a potato masher or hand mixer.
- Add in bacon bits, green onions, cheese, salt, and pepper.

Can I make this recipe ahead of time?
You can, but I wouldn’t recommend it unless you are planning to bake the recipe – it’s much better fresh. If you are going to bake it, just make the recipe as described and follow the instructions for baking below – however, wait for the mixture to cool before covering it with cheese and then cover with plastic wrap, then refrigerate until you are ready to cook.
Can I bake this to make a mashed potato casserole?
Sure! Just make the recipe as described, place it in a casserole dish, cover the top of the potatoes with more cheese, and bake at 350 for 20-25 minutes.
