30-Minute Mini Twice Baked Potatoes with Bacon
These mini twice-baked potatoes are fully loaded with bacon and cheese – and they are the perfect appetizer. They are so easy to make and then pop in your mouth!

Stuffed Mini Potato Skins
Step-by-Step Instructions

Equipment
- Medium-sized bowl
- Potato Masher or Fork
- Baking Sheet
- An Instant Pot or Stove top with pot for preparing the potatoes
Ingredients
- 24-ounce bag of petite potatoes (any variety)
- 1/2 cup sour cream (plus extra for dipping)
- 1/2 cup bacon bits
- 1/2 cup Colby jack (plus extra for sprinkling)
- 3 green onions, chopped
- Salt
- Pepper
Prepare twice-baked potatoes in the desired method – check out this post for different ways to cook petite potatoes. I personally used my Instant Pot for five minutes, and it worked perfectly!
Once cooked, carefully slice each potato in half, being careful not to break the skin.
Scoop out the center and place in a medium-sized bowl and mash with a fork or potato masher.
Place potato skins on a baking sheet.
Repeat until all potatoes are scooped and placed.
In the bowl with the potatoes, add the remaining ingredients and mix until combined.
Add seasonings to taste.
Scoop a small amount back into each potato skin.
Sprinkle with cheese.
Bake at 400 for 20 minutes. Broil if necessary.
Serve with sour cream.

The other day, Forrest said to me, “You know what would be amazing? Mini twice baked potatoes.”
And at that point in time, a genius idea was born. It sounded like something that would be easy to make, easy to eat, and absolutely delicious.
Let me tell you – they are all of those things.
Twice-baked or stuffed potatoes are yummy – but they can be a bit overwhelming. Kind of big, often filling enough to be a main dish (but typically served as a side dish)…but they taste so good!
These mini ones take all the things you know and love about twice-baked potatoes and puts them into a tiny, delicious appetizer.
They are the perfect finger food, and it’s great for parties or just for a fun side dish!
What to Serve With
These would be perfect at a potluck or somewhere that you are having a variety of side dishes and appetizers.
I think it would be delicious served alongside pulled pork, brisket, steak, or any number of BBQd foods.

I think these taste much better when served with something to dip it in. We really enjoyed sour cream, but some other options include queso dip, guacamole, or Greek yogurt.
Substitutions
I know that a lot of people like to use riced cauliflower as a substitute for potatoes. You might be able to get away with that for this post.
Any type of cheese could be used – I think mozzarella would be yummy.
Feel free to mix up any of the spices – or even add something like cayenne or red pepper flakes to give it a little kick.
FAQS
Can I make these ahead of time? Yes, but I wouldn’t bake them until you are ready to cook. Keep them covered and in the refrigerator until you are ready to bake them.
What types of potatoes did you use? I use a variety pack of mini petite potatoes.
How can I make this vegan? You would want to totally omit the bacon, obviously. I would suggest finding a vegan-friendly sour cream (Tofutti comes to mind)
You could leave out the cheese, but if you have a vegan shredded cheese you like, that could be substituted as well.
Are these keto-friendly? No, potatoes are generally not recommended for the Keto lifestyle 🙂
