Parmesan Roasted Squash is the ultimate comfort food. It’s the perfect dish for a summer evening barbecue or a fall dinner. It’s easy to make and tastes delicious!

Paremesan Roasted Squash is one of my go-to dishes when I want to have veggies as a side dish.

I especially love it during the summer when squash is in season and in abundance.

But it is also such a yummy dish for any time of year, too.

Your kids will love the cheesy flavor and they won’t even know that they’re eating something healthy for them.

My boys love it and they love helping to make it. It’s really a great beginners dish for someone starting out or teaching your kids skills.

Substitutions

You can use all zucchini or all squash if you’d prefer to use one over the over but you might miss out on the added color both vegetables bring.

If you don’t have shredded parmesan cheese you can use any cheese you have on hand. Or you could use grated parmesan cheese, too.

If you have seasonings you prefer on your veggie dishes feel free to use them!

If you have an outdoor grill like a Traeger you can cook them on that, just follow the same directions found below.

  • 1 large yellow squash
  • Shredded parmesan cheese
  • Olive oil or Avocado Oil
  • Garlic Powder
  • Salt
  • Pepper
  • Italian Seasoning

Instructions

Preheat oven to 400 degrees (use roasting setting if your oven has it).

Slice zucchini and yellow squash.

Place on a baking sheet with that has been sprayed with cooking spray or on a silicone baking mat.

Drizzle olive oil and sprinkle the seasonings over the top of the squash. Mix around with hands.

Roast for 20-30 minutes, or until the squash is done.
