- Lipton Vegetable Soup Mix
- 8 oz sour cream
- 1 cup mayonnaise
- 10 oz frozen spinach, thawed and excess water removed
- 8 oz Water Chesnuts, drained and chopped
- Black Pepper (if needed)
Instructions
1. In a large bowl, mix together the box of Lipton Vegetable Soup Mix, sour cream, mayonnaise, and water chestnuts.
2. Stir in the thawed, squeezed and chopped spinach until well combined.
3. Chill in the fridge for at least an hour, or overnight if you can. This will help the flavors meld together.
4. Serve with crackers, chips, or vegetables for dipping. Enjoy!

No, you don’t have to use water chestnuts in this recipe. I like them because they add a nice crunch, but you could certainly leave them out if you want.
You could add in some chopped up celery or green onions for a similar crunch. Or, you could just leave them out altogether!
Can I use fresh spinach instead of frozen?
You could use fresh spinach instead of frozen, but you’ll need to cook it down first. I would sauté it in a bit of olive oil until it’s wilted down, then squeeze out any excess water before adding it to the rest of the ingredients.
You’ll need about 2 cups of cooked and wilted spinach for this recipe.
