Zucchini Tator Tots

If you are looking for a new way to use up extra zucchini from your garden then you will love this homemade Zucchini Tots recipe.

Zucchini is not just for bread or muffins anymore and these tots are proof of that! These bite sized tots are melt in your mouth delicious and so savory that even the pickiest eater will love them.

Zucchini Tots are kid friendly and fun to eat, too!

How do you shred zucchini?

There are several ways you can shred zucchini for this recipe. One way is to use your cheese grater. Wash the zucchini and cut off the ends. You do not need to peel the zucchini as the peel adds extra flavor and texture.

Then carefully grated on one side of the zucchini in a downward motion.

If you don’t have a grater you can use a food processor or a mandolin.

You will want to drain any excess water out of the zucchini after it is shredded. Zucchini contains a lot of water! You will it to be as dray as possible so the tots don’t get soggy. You can do this by grating zucchini into a paper towel, cheesecloth or dish towel and wringing out any extra liquid.

How do you pick a good zucchini?

If you are purchasing your zucchini from the store or farmer’s market you will want to look for ones that are 6-8 inches, thin and the skin should be green and smooth.

Are Zucchini Tots low carb?

Zucchini are considerably low carb on their own, however when you make them into tots it ups the carb count considerably because of the bread crumbs.

To avoid this you can mix your zucchini in coconut flour and then use ground up pork rind crumbs instead. This will make this recipe fairly Keto friendly.

How to make Zucchini Tots

Servings: 24 pieces

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients

  • 1 zucchini
  • 2 eggs
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 cup cheddar cheese (shredded)
  • marinara sauce (to dip)

Instructions

  1. Preheat the oven to 400F
  2. Prepare a baking sheet by leaving a stone in the oven or lining a sheet with parchment paper
  3. Shred the zucchini
  4. Place in a mesh strainer or use a cheesecloth to squeeze out as much liquid as possible
  5. In a large mixing bowl, combine all of the ingredients except the marinara sauce
  6. Scoop by the tablespoon and place on the prepared baking dish
  7. Bake for 20-25 minutes, until the tots are golden brown
  8. Serve warm with marinara sauce to dip

How long do Zucchini Tots stay good for?

You can keep leftovers in a ziploc or air tight container. Place them in your fridge and enjoy within 3-5 days

How do you reheat Zucchini Tots?

You can reheat your zucchini tots in the microwave but for a crispier tot heat them in the oven.

Place leftovers on a baking pan and place in the oven and reheat at 350 degrees for about ten minutes.

To reheat in the microwave you can place them on a microwave safe dish and reheat until warmed through in one minute increments

What do you serve with Zucchini Tots?

Zucchini Tots are a great side dish or even a fun snack.

I always dip mine in marina sauce or ranch dressing. They would make a great dish to bring to a pot luck or to eat alongside hamburgers, hot dogs, or any picnic food.
