I tend to use zucchini mostly for bread but I’ve recently discovered how delicious Zucchini Fries are! So I may be pushing my zucchini bread to the side for now and making Zucchini Fries from scratch.
Zucchini is a fairly cheap vegetable that you can buy at the grocery store, Farmer’s Market or grow in your very own garden. Everyone I know who grows their own zucchinis tend to have them grow in great abundance! And often times they might go to waste because you just can’t eat them fast enough or your grow tired of using them for the same few recipes.

What are Zucchini Fries?
Zucchini Fries are a slightly healthier version of french fries. Instead of using potatoes- you use thinly sliced zucchini. Most zucchini fries are dusted in breadcrumbs and Parmesan cheese and a few other ingredients- and then either baked or fried.
How do you prepare zucchini for fries?
We prefer to prepare the zucchini into long, thinly sliced strips or sticks. You could also cut them into circles- similarly to how you would slice a cucumber.
Be sure to wash your zucchini before cutting and remember to leave the peel on! This helps the fries to stay crispy.
How to make Zucchini Fries

Here is what you’ll need:
Ingredients (Serves 4)
-2 zucchini cut into ½ inch sticks
-½ cup all-purpose flour
-⅔ cup breadcrumbs
-⅔ cup Parmesan cheese grated
-2 medium eggs (beaten)
-Salt
-Pepper
Directions
- In a large bowl, combine breadcrumbs and Parmesan, add salt and pepper to taste.
- Cover zucchini sticks in a thin layer of flour, then dip into eggs, then cover with a thick layer of breadcrumb parmesan mix.
- Heat sunflower oil in a large pot over medium-high heat.
- Fried coated zucchini sticks in batches. Cook until zucchini sticks are golden and crispy.
- Transfer to a paper towel-line plate.
- Serve immediately with your favorite dips.

How do you reheat leftover fries?
For any leftover you will want to make sure you store them in the fridge until you are ready to reheat. They should stay good for 2-3 days after making them.
To reheat your fries you can heat a little bit of oil in a hot skillet and toss until warmed through. This method will help them crisp back up a little, as they will probably get soggy after being in the fridge.
Other methods might include heating them up in the oven on a low heat setting or heating them in the microwave. These methods won’t allow them to become crispy but a are find alternative if you are just wanting them to be warmed up again.
