You sure can! You can just get some sweet mandarin oranges and peel/cut them (make sure to get the extra white stuff off) and you can chop up your own fresh pineapple, too!

Can I use Cool Whip instead?

You absolutely can!

What are some variations for this salad?

The great thing about this salad is that is very adaptable. You can add different chopped fruit or take out the ones you don’t like. Make sure you always have your favorite fruits!

If you like a little more a zing, you could add 1/4-1/2 cup sour cream or Greek yogurt.

You can add in some stemmed maraschino cherries for some added color and flavor.

You could use fruit cocktail instead of the mandarin oranges and pineapple tidbits.

You could add sliced, seedless red grapes or green grapes (be careful if you have children!)

You could use a different flavored pudding – such as coconut or pistachio pudding.

Ingredients

  • 15 ounce can mandarin oranges, drained
  • 20 ounce can pineapple tidbits, drained
  • 2 medium bananas, sliced
  • 2 large apples, any variety – diced
  • 1 cup shredded coconut flakes
  • 1 cup mini marshmallows
  • 3 cups of freshly made whipped cream or 1 container of cool whip (which is about 3 cups of cool whip)
  • 3-ounce box of vanilla pudding

Instructions

  1. Open the cans of fruit and drain excess liquid
  2. Right before you are ready to prepare it, slice the bananas and apples.
  3. Combine the chopped fruits and canned fruits in a large bowl and mix
  4. Fold in coconut, cool whip, and vanilla pudding
  5. Chill for a few hours before serving.

While you can’t really prolong how long fruit salad stays fresh for you can do a few things to help it last a day or so after making.
