This is my go-to recipe for cooking broccoli. Raw broccoli isn’t always my favorite but I’ve found that roasting it in the oven makes it delicious. Adding garlic and Parmesan to this ordinary vegetable really ups the flavor and baking it in the oven makes it tender and juicy.
Broccoli is relatively cheap and the possibilities are endless on how to prepare it. You can play around with different flavor combinations and decide which way you prefer it best.
Is Roasted Broccoli still healthy?
Broccoli on its own is very healthy for you. It’s packed full of fiber, nutrients vitamins and a surprisingly fair amount of protein, too.
In case you were wondering, roasting broccoli won’t totally destroy those nutrients, either. The facts are that anytime you cook any vegetable in any way you will lose some of those nutrients, but over all, you can bake your broccoli and not worry about losing too many healthy vitamins along with it.
Typically when you roast broccoli you add some sort of butter or oil to it- this can make your broccoli have more fat or added calories opposed to eating it raw. If you are concerned about adding extra calories to your dish be mindful of how much butter or oil you add to your dish.
How to chop Broccoli
When shopping you will want to choose a head of broccoli with florets that are bright green and with a stalk that is firm and strong.
Before you begin cutting, be sure to wash your broccoli and pat dry with a paper towel. To begin, cut off and discard the stalk.
Then carefully use a knife to cut the florets into bite-sized pieces. We prefer to halve the florets length-wise when we are roasting them so that the edges can lay flat on the pan.
Roasted Broccoli Variations
There are several ways you can prepare Baked Broccoli. The recipe below is our favorite and a classic way to make it but you can always switch it up.
- Make it “lemony” by adding a squeeze of fresh lemon and Lemon Pepper
- Make it spicier by adding red pepper flakes to your buttered or oiled broccoli
- Make it extra cheesy by adding more cheese, different kinds of cheese like cheddar, nacho cheese or even something fancier like Gouda.
- Make it with ginger by grating or mincing fresh ginger and toss it with the broccoli before cooking- drizzle with sesame oil after it has finished cooking.
Roasted Broccoli Ingredients
- 6 cups broccoli, washed and cut
- 3 tablespoons olive or avocado oil
- 2 tablespoons minced garlic
- Salt
- Pepper
- Grated Parmesan cheese- however much is needed to sprinkle on top of your broccoli
- 1.5 Tbsp butter
How to make Oven Roasted Broccoli
- Preheat oven to 400 degrees.
- Toss broccoli with olive oil and minced garlic.
- Season generously with salt and pepper
- Place broccoli on a silicone baking mat or tin foil lined pan.
- Roast for 10 minutes.
- Sprinkle Parmesan chees, flip and roast for another 10 minutes.
- When removed from the oven, toss with butter. Serve immediately.

How long does leftover Broccoli stay good for?
You can store leftovers in an airtight container in the fridge for 3-5 days.
How do you reheat leftover Roasted Broccoli?
You can reheat your broccoli by placing leftovers on a cookie sheet and heating up in your oven at 350 degrees for 10-15 minutes. You can use a spatula to turn and flip as it warms.
To reheat your broccoli in the microwave place in a microwave safe bowl and heat up slowly until warmed through.
Add more butter or cheese as needed.
What to serve with Roasted Broccoli
There are several ways you can serve this dish. It can be served on its own as a simple snack or lunch or you can make it is a side dish to just about any meal.
We love to eat it with baked chicken or a roast along with pasta dishes.
You can also prepare the broccoli as directed and then add it to other dishes such as quiche, pasta, broccoli soup or other casseroles or soups that call for broccoli.
