What is in Southern Potato Salad?
You might be asking yourself…what even constitutes a Southern Potato Salad. While this may vary depending on who you talk to – here are a few of the key elements
- Mustard – we recommend regular ol’ yellow mustard
- Creamy texture – it typically does not contain large chunks of potato
- A small amount of apple cider vinegar
- Diced up dill pickles or relish
- A little bit of sugar
What type of potatoes is best in this salad?
We prefer using Yukon Gold potatoes for this dish. The flavor is delicious and it blends well with the other ingredients.
Yukon Gold are also easy for boiling. Starchier potatoes are recommended for a potato salad. You could also try red potatoes – though we prefer our red skin potato salad recipe if that’s the type of potato you are using!
Although Russett potatoes are readily available and fairly inexpensive, they don’t usually hold their form very well, and the taste isn’t as good either.
Can potato salad be frozen?
Yes – but be aware that it will not have the same consistency as it did when it was fresh. It very well may be mushy and soggy.
If you choose to freeze your potato salad, make sure you store them in an airtight bag, squeezing out extra air. Make sure you enjoy the potato salad within three months.
Can I use honey mustard in this recipe?
We have not tried using honey mustard with this recipe, but we do not recommend it. It would change the flavor profile of the entire dish.
Should I cut my potatoes for Potato Salad before boiling?
It generally is a good idea to dice them – it makes it so they cook faster and are easier to handle when preparing your dish.

Southern Potato Salad Ingredients
- 3 lbs yukon gold potatoes
- 6 eggs
- 1 cup mayo
- 1 tablespoon mustard
- 1 tablespoon finely diced dill pickles or relish
- 1 tablespoon apple cider vinegar
- 1 tablespoon white sugar
- 1 teaspoon celery seed
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Instructions
- Prepare hard boiled eggs using desired method, peel, and set aside to cool.
- Wash potatoes and quarter.
- Bring a pot of water to a boil with a little bit of salt. Boil potatoes until very tender.
- Combine mayo, mustard, diced dill pickles, apple cider vinegar, sugar, celery seed, salt, and pepper.
- Mash potatoes with five of the hard-boiled eggs. Mix in dressing.
- Refrigerate and serve cold. Top with sliced hard boiled egg.

We definitely recommend using mayonnaise in this recipe. It’s really an essential part of the dish! However, you could try using a lower fat mayo if you are looking to cut down on the calories.
Avocado mayonnaise is also rather popular for a “healthier” option these days. You could also use a full avocado, plain greek yogurt, or hummus – but the taste will be different than a traditional mustard potato salad.
How long can potato salad be left at room temperature?
Potato salad should not be out of a refrigerator for more than two hours. Make sure you are properly keeping it cool before serving and don’t leave it out on a potluck table for too long.
