Ingredients

  • 4 tablespoon butter
  • 4 tbsp flour
  • 2 cups unflavored non-dairy milk (I used almond milk)
  • Black Pepper
  • Salt
  • Cayenne pepper (optional)

Instructions

  1. Melt butter in a skillet
  2. Add flour and mix continuously until golden brown, about 2-3 minutes.
  3. Slowly add in your non-dairy milk, stirring constantly until it begins to thicken and reaches your desired consistency.
  4. Once gravy has thickened, remove from heat and mix in salt and pepper to taste. Add cayenne pepper if desired.
  5. Let cool slightly serve while still warm to prevent it from thickening too much.

What type of non-dairy milk can I make this with?

You can use any substitute for milk in this recipe. I used almond milk, but you could use oat milk, soy milk, coconut milk, etc.

I strongly recommend using an unsweetened and unflavored variety, though. The first time I made this, I accidentally used vanilla almond milk, and it took A LOT of salt and pepper to get the taste out.

What kind of flour should I use?

You can make the gravy with a variety of different flours. Traditional all-purpose flour, wheat flour, oat flour, etc.

How can I store this?

You can store the leftovers in an airtight container in the fridge. Just keep in mind that it will thicken up, so you will probably need to add some milk or even some broth when you reheat it.

Can I make this gravy with drippings?

Absolutely! If you do, I would suggest following this gravy with drippings recipe and just using your non-dairy milk.

Can I use water instead of milk?

If you want to use water instead of milk, you definitely can. I find the results are a little less creamy, but if you are in a pinch, I would do that. I might suggest using a chicken or vegetable broth if you have it, just to give it more flavor.

What is a slurry?

A slurry is just a mixture of starch – such as flour – and a cold liquid like water or milk – used to thicken a sauce. It sometimes is referred to use a roux.

How to reheat the gravy?

If you find yourself with leftover gravy, don’t worry! Reheating gravy is actually quite simple.

The key is to reheat it slowly and whisk it frequently to prevent lumps from forming.

  1. Start by pouring the gravy into a saucepan and setting it over low heat.
  2. Then, whisk the gravy constantly, making sure to reach all the edges of the pan.
  3. As the gravy starts to warm up, you may need to add a little water to thin it out.
  4. Once the gravy is heated through, taste it and add additional seasoning as needed.

How can I make a thicker gravy?

If you find your gravy is too thin, you can heat it up for a little while longer and stir until thick. It also will get thicker as it cools.

What should I serve this gravy with?

There are so many recipes you can serve a cream gravy with. Here are a few ideas:

  • biscuits and gravy
  • mashed potatoes
  • fried chicken
  • many recipes
  • fried chicken with rice

Can I put different seasonings in?

A little salt and pepper goes a long way, but you could also add fresh herbs, such as thyme or sage, or garlic powder, to add more flavor to the gravy. I actually used Dan-O’s spicy seasoning, which is one of my favorites.

Why is my gravy clumpy?

This likely happened because you didn’t the slurry with the milk enough. You can try and add more liquid.
