How to make delicious gravy in an Instant Pot

One of my favorite things to eat is gravy.

I mean, I know I can’t eat it on it’s own, but I feel like mashed potatoes, turkey, roast beef, etc…they just don’t taste as good without gravy.

And I’d be lying if I said I didn’t often sop up extra gravy with a delicious dinner roll. Gravy just make everything better.

How to separate the fat from the drippings?

There are multiple methods that you can use to separate the fat from the drippings of your meat. After cooking your meat in the Instant Pot, use the leftover liquid to make some amazing gravy. The easiest way to separate the unwanted fat from the precious meat drippings is to use a fat separator.

A fat separator is a cool contraption that is basically a measuring cup with a strainer and a fancy air-locked spout. With the cap on the spout, pour in the the meat liquid through the strainer. The strainer help keep unwanted bigger items out of the liquid. When it is all poured out, wait for a few minutes so that the fat can rise to the top of the measuring cup. When you can see a clear separation from the fat on top and the drippings on the bottom, uncap the spout, then slowly pour your drippings into your desired container. Pour until you get to the fat line and you’re done.

What if you don’t have a fat separator?

Let’s be honest, this is the only time you will ever use a fat separator, so I don’t blame you for not having one laying around in your kitchen. That’s okay! There are other methods you can use to separate the fat from the drippings.

Ziplock Plastic Bag

You can also get a large ziplock bag, pour the liquid into the bag, seal it, and wait a few minutes for the fat to rise. Then lift the bag over the container you want to put the drippings in and cut a small hole in one of the corners and let the drippings pour out into the container. Stop pouring before the fat reaches the cut corner. This method works pretty well.

Turkey Baster

One method is to let the liquid sit for a while until the the fat rises to the top. When the fat rises, use a turkey baster to suck up the top fat layer from the rest of the liquid and discard it. Another option is to insert the turkey baster deep into the liquid and suck out the drippings directly leaving the separated fat on top. This method is a little time intensive and difficult to remove all of the fat, but it works.

Good Old Fashioned Spoon

Of course, you could also use a spoon to skim the fat off the top of the liquid. Just wait for the fat to rise to the top then take a spoon and scoop out the fat and discard it. This method is also tedious but it gets the job done.

What to eat gravy with?

I think the better question is what can’t you eat gravy with? I love love love gravy with my mashed potatoes and I love to dip my turkey in it. Just give me a plate of food and smother some gravy on top of everything and I will be happier than ever. Then when the food is gone, take a bread roll and clean up the plate by sopping up all of that leftover gravy goodness. That is the best part of Thanksgiving.

  • 2 cups of drippings or Broth (chicken, beef, or vegetable)
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 tablespoon heavy cream
  • Salt and Pepper (if needed)

Instructions

USING DRIPPINGS

  1. Cook your meat in the Instant Pot according to the instructions.
  2. Once done cooking, remove from Instant Pot.
  3. Pour out the drippings to separate the fat.
  4. Deglaze the bottom of the Instant Pot, change it to a low saute, and then melt the butter.
  5. Whisk in the butter and cook for about 3-5 minutes (stirring the whole time).
  6. Pour in the drippings and whisk together with the butter mixture and stir until brought to a boil.
  7. Cook until thickened.
  8. Add in any additional seasoning, if necessary, and add heavy cream.
  9. Serve immediately.

USING BROTH

  1. Whisk in the butter and cook for about 3-5 minutes (stirring the whole time).
  2. Pour in the broth of choice and whisk together with the butter mixture and stir until brought to a boil.
  3. Cook until thickened.
  4. Add in any additional seasoning, if necessary, and add heavy cream.
  5. Serve immediately.

How long does gravy last in the fridge?

It can last four days in the fridge, if you have any leftovers after the Thanksgiving feast in the first place. Make sure it is stored in an airtight container.

How to reheat gravy?

When reheating, you can add a splash of milk to thin the sauce if you are reheating directly from the refrigerator. Gravy tends to thicken as it cools, so this is essential.
