Homemade Sourdough Rolls Recipe – Super Fluffy!

Sourdough Dinner Rolls are the perfect side dish for any hearty meal. After trying these, you will never want to make frozen rolls again. With our simple instructions, you can even make rolls in your instant pot.
I love sourdough bread, and as soon as I started cooking with a natural yeast starter, I knew I would have to learn to make rolls.
This recipe took me quite a few tries to perfect, but I think the result is perfectly fluffy, mild-flavored dinner rolls that everyone loves!
How to make Sourdough Rolls
Ingredients
- 3/4 cup buttermilk, room temperature
- 1 cup active sourdough starter (220 grams)
- 3 – 3 1/2 cups flour
- 1/4 cup melted butter
- 1/4 cup white sugar
- 1 large egg
- 1 teaspoon salt
- Butter for brushing the tops
Instructions
- Mix the buttermilk, sourdough starter, butter, egg, salt, and white sugar in the stand mixer bowl until combined. Mix vigorously with a wooden spoon if you don’t have a stand mixer.
- Add in the flour slowly, 1/2 cup at a time and mix until the dough is no longer sticky. Combine each 1/2 cup with the other ingredients well before adding more flour – too much flour will make these dense.
- Once all the flour is added, let it knead with a dough hook attachment for about 10 minutes or until soft, smooth, and elastic. Alternatively, you can hand-knead it.
- Place in a butter bowl and let rise in a warm spot until about doubled – or around 12 hours.
- After the dough has risen sufficiently, gently punch it into the bowl. Divide the dough into 12-14 equal pieces.
- Form the dough by pulling four sides into the center and rounding out the roll.
- Place in a greased 9×13 glass dish. Let rise – this may take 6-8 hours. For a faster rising time, turn your oven to 200 degrees. Once it’s preheated, turn it off and place the rolls inside to rise.
- Once the rolls have risen, set them to 375 degrees. Bake for 20-25 minutes.
- Brush with butter and enjoy!
Do Sourdough Rolls taste sour?
Sourdough rolls are fluffy and delicious and have a chewy, distinct flavor. I wouldn’t say they taste sour. They might be slightly tangy, but definitely not overpowering or bitter. They are the perfect combination of tangy and savory!
Its flavor might take a minute to get used to, but I have found that most people love sourdough bread.
How long does it take to make sourdough rolls?
These roles are a slight labor of love because of the rising time. If you are in a hurry, use our Instant Pot Rising Instructions.
Once you have formed the rolls, you will want them to rise for another six hours, so plan accordingly. There are a few tips to help them rise faster. One way is to turn your oven to 200 degrees and set the rolls in their dish on your stovetop.

Turn your oven to 200 degrees. Once it’s preheated, turn it off, and place the rolls inside to rise. Once they are ready to bake, they will need to bake for 20-25 minutes
What should I serve with sourdough dinner rolls?
For any meal that you usually would serve, roll! I personally love them with roast beef and mashed potatoes.
Can you freeze sourdough rolls?
Yes. After they have been baked, you can store them in the freezer for up to three months. To defrost, remove them from the freezer and let them stand on your countertop until soft.
Can I double this recipe?
Yes. I double-roll recipes all the time, especially for large crowds! Just follow the instructions and make sure you double each ingredient.

I have put these in a refrigerator for overnight. This is a great recipe as written! Good directions and the they taste like the schoolhouse rolls of old with a sourdough tang. Try them, husband and grown boys go crazy over these!
