I came up with this dip after Dandy Produce sent me some of their AMAZING ears of corn. I grilled it up on our cast iron skillets, and then I shaved it off. I do think fresh corn is best for this dip, but you can definitely use canned or frozen if you’d rather!
What is Mexican Street Corn Dip?
Known as Elote- Mexican Street Corn it is basically dressed up corn on the cob!
Elote is cooked sweet corn slathered in a flavorful mixture of mayonnaise, crema, and chili powder and then sprinkled with cojita cheese. It is usually called Mexican street corn because it’s a popular snack sold by vendors in Mexico. However, it is a delicious side dish enjoyed by people anywhere and everywhere.
Mexican Street Corn is usually served on the cob but this recipe is all about making it into a dip!
By adding a few ingredients, baking it in a dish and serving with chips you have got yourself a delicious Elote Dip that is just as good- if not better- than the original.
Is this dip served hot or cold?
It actually tastes great either way. As the recipe is written, we have done it as a warm dip. But it tasted amazing cold as well. So feel free to try it either way!
What is cotija cheese?
Cotija cheese is a traditonal Mexican cheese. You’ll often find it in the Mexican food aisle in the refrigerated section- or at your local Mexican market. It white in color, firm and dry in texture, and salty and milky in flavor.
If you can’t find Cotija for this recipe or don’t want to use it you can substitute it for parmesan romano cheese instead.
Can I use low-fat ingredients?
While full fat ingredients are usually richer in flavor you can definitely use low-fat varieties of sour cream mayo and cheese.
How to make Mexican Street Corn Dip
- If you are going to use corn on the cob you will want to cook it first. After it is cooked take a knife and shave the corn off the cob and place to the side
- Gather your ingredients- chop your cilantro, squeeze your lime and open any cans or containers that you will need.
- Mix everything together- dump the corn, mayo, sour cream, cheese, salt, pepper, lime juice, s&p and cilantro together in a bowl and mix well.
- Add more cheese- once combined pour into a baking dish and top with more cheese.
- Bake- place your dip in a pre-heated oven of 350 degrees and cook for 25-30 minutes
- Serve and enjoy!

- 2 16 ounce cans of corn or 8 ears of corn
- 1/2 cup mayo
- 1/2 cup sour cream or crema
- 1/2 cup grated parmesan romano or cotija
- 1/8 cup Tajin Classic seasoning (available at most grocery stores)
- Salt
- Pepper
- Chopped cilantro or cilantro paste
- Additional parmesan cheese for topping
Instructions
- Saute corn in some oil and a little bit of Taijin seasoning – if you are using full heads of corn, then you should grill/saute the full ears of corn until cooked
- Mix your ingredients together in a large bowl
- Once combined transfer to a baking dish
- Top mixture with more parmesan cheese
- Bake in the oven for 25-30 minutes
- Alternatively, you can serve it cold!

- 1/2 cup parmesan romano or cotija
- 1/8 cup that lime spice
- salt
- pepper
- cilantro
Instructions
- Mix your ingredients together in a large bowl
- Once combined transfer to a baking dish
- Top mixture with more parmesan cheese
- Bake in the oven for 25-30 minutes
- Alternatively, you can serve it cold!

What do you serve Elote Dip with?
This dip is delicious served with tortilla chips, pita chips, or chunks of bread. It is meant to be a warm dish but you can always enjoy it cold after it has been cooked!
Serve it in a dish, a cup or on a platter- it is delicious no matter what!
How long will this dip stay good for?
While it is not a good candidate for freezing ( it will become too mushy and wet once thawed) it will stay good in your refrigerator for up to five days. Simply put leftovers in your fridge in a covered or sealed bowl.
Where can I purchase Tajin seasoning?
This is available at most grocery stores. We purchased it at Target in the latin foods aisle! You can also buy it on Amazon.
Can I use sour cream instead of Crema? Where do I get crema?
I always buy my crema out at local Kroger grocery store, and you should be able to find it at most grocery stores. However, I was not able to find it at Target. You can use sour cream instead, but we prefer the consistency and flavor of crema instead.
