Corn is such a popular food that compliments many different dishes. Unsurprisingly, the United States is the leading consumer of corn worldwide!
Because people love corn so much, this recipe is perfect to bring to something as simple as a family dinner or something a little fancier. It takes the flavor of the popular Mexican Street Corn (also known as Elote) and makes it into a delicious salad that can be eaten with a spoon or with a chip! It makes for a great Cinco de Mayo side dish.
The best part is, it’s made with things that you may already have in your kitchen!

- 2 cans or bags of frozen kerneled corn
- Oil
- 1 Tablespoon Tajín
- 1 Tablespoon Garlic, minced
- 1/2 Cup Mayo
- 1 Avocado, chopped
- 1/2 Cup Parmesan
- 1 Jalapeño, deseeded and diced
- 1 Cup Cilantro Vinaigrette Dressing (I used Primal Kitchen – you can use whatever kind you like including homemade)
Instructions
- Sauté corn in oil on the stove until browned
- Mix together corn with Tajín, garlic, mayo, parmesan, and jalapeño
- Fold in avocado
- Toss with cilantro vinaigrette dressing
- Chill at least an hour before serving
Can Mexican Street Corn Salad be made ahead of time?
Yes! It is recommended that the salad be chilled at least one hour before serving, but it can definitely be made earlier.
What goes with this salad?
Mexican street corn salad goes well with main dishes like hamburgers or chicken, making it a perfect side dish for a backyard barbeque.
It can also be paired with sides like rolls, coleslaw, baked beans, or watermelon.
How should street corn salad be served?
Mexican street corn salad is ready to serve as soon as the cilantro vinaigrette dressing is added.
When you’re ready to serve, put it in a serving bowl and garnish the salad with sliced avocado, cilantro leaves, and a sprinkle of Tajín.
It is best when it has been chilled for at least an hour.

How long will street corn salad last in the fridge?
If there are leftovers, put the remaining salad in a reusable container and into the fridge.
It is a chilled dish, so it can last in the refrigerator for up to 3 days.
Can I freeze corn salad?
I don’t recommend freezing the corn salad, as a lot of the fresh ingredients, like the avocado, would go bad in the freezer.
