No potluck or BBQ is complete without a classic potato salad. However, the popular side dish can be a bit time consuming – but not when you use your Instant Pot! Ever since we discovered how to make our potato salad in the Instant Pot, we really can’t imagine making it any other way. This is truly the best potato salad around!
Best Instant Pot Potato Salad Recipe
If there is a way to use my Instant Pot, you better believe I will! After using it for years to make mashed potatoes and hard boiled eggs, I thought, “Why not a potato salad?”
I took the traditional potato salad recipe and just made a few tweaks so you can make it in the Instant pot. This is such an easy potato salad recipe, and it’s sure to become one of our favorite recipes for years to come.
This recipe is extremely easy to throw together. It requires very little “babysitting”, and the results are delicious. You can easily adjust the flavors to your liking, but we think our combination of ingredients is superb. I think this is one of my favorite ways to use an electric pressure cooker.
This is a creamy potato salad with a bit of a zing to it due to the mustard and pickle juice. We like to use sweet pickles because it really pairs nicely with the other ingredients. We love this delicious homemade potato salad, and we think you will, too! It is truly our favorite potato salad recipe.
How to cook eggs and potatoes together in the instant pot?
This is the best part about making a potato salad in your Instant Pot! You can cook the eggs and potatoes together – yep, you throw your diced potatoes and whole eggs in there together! It is a truly a pro tip when it comes to Instant Pot cooking.
The eggs cook at the same time as the potatoes, and when you are done – you just mix it all together.
Here’s what you do:
- Quarter your potatoes
- Add 2 cups of water to your Instant Pot
- Add potatoes
At this point, you can do one of two things:
1. Add shelled eggs on top of the potatoes
OR my favorite method
2. Crack the eggs into an Instant Pot safe dish (like a springform pan) and place that on top of the potatoes. It kind of makes an egg loaf
of sorts!
I sprinkle some salt into the Instant Pot, and then I cook it for 4 minutes on manual high pressure. As soon as it’s done, I do quick pressure release and then I scrap the eggs in, mash it together, and voila! Done. Easiest potato salad ever!
Can I make potato salad ahead of time?
Yes. You could easily make this 1-2 days ahead of time. Just mix the ingredients together when they are cold and keep in an air tight container until ready to serve.
Do I have to use eggs?
If you’d rather not use eggs, you can do this recipe without the eggs. You can cook potatoes at the same temperature and length of time in the Instant Pot
Can I use use egg whites?

What if I have extra eggs?
What a great problem to have! If you feel like you had too many eggs cooked, you can use them for so many different dishes – macaroni salad and egg salad are two of our favorites!
What type of potatoes should I use in potato salad?
Yukon Golds are my favorite potatoes to use for potato salad.
But they aren’t the only ones you can use!
Other potatoes that are good for potato salads are red potatoes – though you may want to check out our Instant Pot red potato salad instead. You can use a Russet potatoes, the only thing to keep in mind is that they don’t tend to hold up as well in potato salad, and the flavor isn’t as desirable.
How to Make Instant Pot Potato Salad
Ingredients
- 3 lbs yukon gold potatoes
- 6 eggs
- 1 cup mayo
- 1 tablespoon yellow mustard
- 1 tablespoon pickle juice
- 1 teaspoon celery seed
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Supplies
- Small Bowl
- Large Mixing Bowl
- Serving Bowl
- Instant Pot
- Springform Pan or other Instant Pot safe dish
Instructions
Instant Pot Instructions
- Quarter your potatoes – we don’t recommend peeling them, but you can if you want.
- Place two cups of cold water in the Instant Pot
- Add the potatoes
- You can place the eggs on top of the eggs – shell on – or crack them into an Instant Pot safe dish and place that on top of the potatoes.
- Add about a teaspoon of salt
- Cook for 4 minutes of cook time on natural release and do a quick release of the pressure.
- Drain the water
- Combine the eggs and potatoes together and mash
- Combine with the dressing below and enjoy!

- Combine the remaining ingredients from the list above and enjoy! Best when served cold.

We are all about creaminess! You could add in a 1/2 cup of sour cream to make it even creamier!

Yes! You can absolutely double this recipe! It keeps well in the refrigerator if stored in an air tight container. There’s no need to adjust the time or water used in the Instant Pot for this recipe.
How long does potato salad stay good for?
When properly stored in an airtight container potato salad should stay good in the refrigerator for 3-5 days.
hHow long can potato salad be left at room temperature?
Potato salad should not be out of a refrigerator for more than two hours. Make sure you are properly keeping it cool before serving and don’t leave it out on a potluck table for too long.
Can you freeze leftover potato salad?
Store leftovers in an air tight bag- making sure to squeeze out an excess air. Enjoy within 3 months.
Be aware that once unfrozen the potato salad may not have the same consistency from when it was freshly made. The contents may be mushy and soggy after freezing.
