Seriously, is there anything better than warm cheesy potatoes? What if I told you that hearty cheesy potatoes are only a few simple ingredients and steps away?

The magic of a slow cooker is that you can just combine all of the ingredients, step away for a few hours and voila! Your magnificent cheesy potatoes are ready for you to indulge on.

Is it really that easy?

YES! One of the major benefits of slow cookers is how little effort and work you need to put in to have a delicious meal. Specifically for this recipe, you will combine the frozen hash browns, cream of chicken, sour cream, cheddar cheese soup, salt, pepper, garlic powder, onion powder, and half of the cheese in the slow cooker, turn it on, and walk away.

After a few hours, mix in the rest of the cheese and cook for an additional 30 minutes, then top with melted butter and bread crumbs. THAT’S IT!

The hardest part is measuring the ingredients.

Can you make this recipe in the oven?

If you are wanting a quicker way to cook, you can combine all of the ingredients into a baking dish and cook it that way. You can preheat the oven to 350 degrees and put it in there for about 40 minutes, adding in half of the cheese 5 minutes before it’s done.

The downside about this method is that you’ll have to check on the dish often so that it doesn’t overcook. The slow cooker makes it a lot easier to make and a lot harder to burn because of the low temperature cooking style.

Can you use fresh potatoes instead?

You can use fresh potatoes instead of frozen hash browns if you would like. You will have to boil the potatoes before you continue with the recipe though.

You can either dice the potatoes, or you can shred it to be more like the hash browns. For this recipe, I prefer the texture and shape of hash browns, but feel free to personalize this recipe however you like.

  • 1 can cream of chicken
  • 8 ounces sour cream
  • 3 cups Colby jack Monterrey cheese, shredded and divided
  • 1 can cheddar cheese soup
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • 1 cup panko bread crumbs
  • 1/4 cup melted butter

Instructions

  1. Combine hash browns, cream of chicken, sour cream, 1.5 cups of cheese, cheddar cheese soup, salt, pepper, garlic powder, and onion powder in your slow cooker. 
  2. Place the lid on and cook on high for 2.5 hours or low for about 4-5 hours. 
  3. About 30 minutes before serving, mix well and add in remaining 1.5 cups of cheese. 
  4. Melt butter and combine with bread crumbs. Sprinkle on top.

How Long Does this Last?

Leftovers can be stored in an airtight container and left in the fridge for 3-5 days after you cook it.

How Can I Make This Healthier?

Honestly, this isn’t something that’s inherently healthy, and I wouldn’t make too many adjustments. You could make your own cream of chicken soup, or use an organic brand instead. Greek Yogurt can be substituted for sour cream. You could also omit the cheddar cheese soup, though it will definitely lose some of it’s cheesiness!

Variations

You could use crushed up corn flakes or ritz crackers instead of the bread crumbs. It would be fun to play with the cheese a little bit – maybe some mozzarella or even some gruyere.
