We recently attended our niece’s baptism. After the baptism her family held a dinner with family and friends and that is where I was introduced to what might possibly be my favorite Jello Salad ever.

It was a delicious Blueberry Jello salad with cream cheese and whipped cream with a mixed nut topping.

Ah. I definitely went back for seconds and was dying to get my hands on the recipe! It reminds me of how I fell in love with my blueberry muffins without milk recipe.

While my sister couldn’t remember to brought the dish to the dinner, I decided to get to work at replicating it and I have to say- this tastes just like it!

This is one recipe that we will make again and again, and I hope you do, too.

Why do they call it jello salad?

The term “Jello salad” typically refers to a type of dish made with Jello (gelatin dessert) as one of its main ingredients. How long will Jello Salad keep in the fridge? If properly stored in an airtight container it should be good for 1-2 days.

Can I make Jello Salad ahead of time? Yes. I would recommend making it several hours ahead of time to allow the flavors to mesh. Be sure to serve within 24 hours. If doing so, put the nuts on right before serving.

Can I double this recipe? Always!

Can I leave the nuts off?  Yes, you can.

Ingredients

4 cups water

3 ounce berry blue jello

3 ounce raspberry jello

3 ounce vanilla pudding

1/2 cup cold water

1 8 ounce container blueberries

4 ounces cream cheese, softened

2/3 container cool whip or 2 cups homemade whipped cream

Mixed nut topping

Instructions

Bring 4 cups of water to a roaring boil in a saucepan.

Remove from heat and quickly whisk in the jello and pudding mixes. Add 1/2 cup cold water.

Pour jello into a glass dish (the larger it is, the thinner the jello layer).

Add the blueberries throughout the jello.

Cover with plastic wrap and refrigerate for 4-5 hours.

After 4-5 hours, beat together softened cream cheese and Cool Whip or whipped cream.

Spread on top of the jello and sprinkle with the mixed nuts.

Can You Freeze Jello Salad?

No, please don’t freeze this dish for later consumption. It will become too mushy to enjoy later on.
