You can use any substitute for milk in this recipe. I used almond milk, but you could use oat milk, soy milk, coconut milk, etc.
I strongly recommend using an unsweetened and unflavored variety, though. The first time I made this, I accidentally used vanilla almond milk, and it took A LOT of salt and pepper to get the taste out.
What kind of flour should I use?
You can make the gravy with a variety of different flours. Traditional all-purpose flour, wheat flour, oat flour, etc.
How can I store this?
You can store the leftovers in an airtight container in the fridge. Just keep in mind that it will thicken up, so you will probably need to add some milk or even some broth when you reheat it.
Can I make this gravy with drippings?
Absolutely! If you do, I would suggest following this gravy with drippings recipe and just using your non-dairy milk.
Can I use water instead of milk?
If you want to use water instead of milk, you definitely can. I find the results are a little less creamy, but if you are in a pinch, I would do that. I might suggest using a chicken or vegetable broth if you have it, just to give it more flavor.
