This recipe is so easy that all you have to do is mix up the ingredients, place it in the oven for an hour, dress it and eat; easy as pie….. er…. cake.

Can you make substitutes in this recipe?

This recipe calls for 3/4 cup of Crisco shortening and according to The Spruce Eats, you can substitute each cup of shortening with 1 cup of butter or margarine PLUS 2 tablespoons. Naturally, Crisco makes recipes more moist, so if you are substituting it with butter or margarine, you’ll need a little bit more butter to maintain its moistness. However, this will also change the texture of the cake, so we recommend using Crisco still.

Although the recipe includes a delicious orange glaze, you can leave it out if you want. It will still be delicious without the glaze.

But you know you deserve some nice frosting on your cake.

Nuts and raisins are also optional if you want to add a bit of texture and taste to the recipe.

How do you make moist cake?

The best way to make this recipe moist is to follow the directions exactly. That means exact measurements. Following the ingredient list is important for making a nice moist cake.

Additionally, make sure not to over mix the batter. Over mixing can cause air pockets to form which leads to a denser cake that is not moist. It’s also important to slowly add the dry ingredients to the mixture as you go so that everything is mixed evenly and there are no air pockets or bubbles. You only need to mix-in the dry ingredients until it is combined.

Lastly, do not over bake the cake. Make sure you only cook it long enough until an inserted toothpick can come out clean. After that it will over bake, causing it to lose its moisture.

If you have leftover cake (impossible in my house), wrap the cake in plastic wrap, especially the parts that have been cut and exposed. You want to make it as tight as you can so that it can keep it’s moisture. A cut cake can last up to 4 days wrapped at room temperature.

  • 1/2 cup nuts or raisins – optional (I did not put any in this cake)
  • 1 Tablespoon pumpkin pie spice
  • 4 eggs

  • 2 cups flour
  • 1 1/3 cups oats
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons baking soda

Glaze Ingredients:

  • 1/2 cup powdered sugar
  • 2-3 teaspoons orange juice (I actually just use that amount of fozen orange juice concentrate – thawed)
  • 3/4 teaspoon grated orange peel

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour bundt or tube pan.
  3. Beat brown sugar and Crisco together in mixer till fluffy. Add pumpkin, eggs, and water and mix together.
  4. Combine dry ingredients and mix well.
  5. Slowly add dry ingredient mixture to the pumpkin mixture and combine well.
  6. Pour into bundt or tube pan and cook approximately 60 minutes till inserted toothpick comes out clean.
  7. When cake has thoroughly cooled, run a butter knife around the edges to finish loosening it from the pan. Place a plate over the top of cake pan and invert cake pan so that cake falls on to the plate.
  8. Combine ingredients for glaze together. Drizzle on top of cooled cake once cake is on a plate or cake holder.
  9. Garnish with candied orange slices, jelly beans, or whipped cream.
