Easy Colcannon Potatoes Recipe
Irish Colcannon potatoes are a savory combination of potatoes, kale, onion, and mushroom made into a creamy mash with the help of a generous serving of butter and cream.
Potatoes get a bad rap for being full of carbs, but they are packed with fiber, antioxidants, and vitamins. Plus they are inexpensive making them a very budget friendly option. Honestly, it’s no wonder that Ireland is known for serving potatoes with almost every meal!
I think that by far the best part about potatoes is that kids love them! They are great for hiding some of those vegetables that kids don’t really love like mushrooms and kale.
You will only need a handful of ingredients to whip up this dreamy mash, and with only about 15 minutes of active cooking time, your hands will be free to make the other parts of your dinner.
How to make Irish Colcannon
My kids love mashed potatoes, and Irish Colcannon is no exception to that. The main difference between mashed potatoes and Colcannon is that Colcannon is packed with nutrient dense veggies that will keep your family full for the rest of the day.
Just like mashed potatoes, Colcannon is super simple to make. The only added step is softening the vegetables. Easy, right?
While the vegetables are softening, combine potatoes and cream with a masher. Mix in the vegetables, and if you want to serve it the same way the Irish do, place a pad of butter in a well on top of the Colcannon.
What goes well with Irish Colcannon?
Can you think of a better pairing than meat and potatoes? Because I certainly can’t! If you want to go all out, pair it with corned beef, but chicken, steak, and even fish make great options too. You definitely will want a flavorful gravy recipe, too!
Can you make Irish Colcannon ahead of time?
You sure can! This makes a super easy side for a St. Patrick’s Day party. Just make it the day before, and throw it in a slow cooker on low for a couple of hours.
Ingredients
Here’s what you’ll need:
- 4-5 large potatoes, peeled and cubed
- Salt
- Pepper
- 5-6 tablespoons butter
- 3 lightly packed cups of chopped kale
- 1/2 cup white onion
- 1/2 cup mushrooms, chopped
- 1/2 cup heavy cream
Instructions (Stove)
- Add a couple tablespoons of salt to a pot water.
- Add cubed potatoes and boil until fork tender – drain
- In a skillet on the stove, add butter.
- Once melted, add kale and cook for 3-4 minutes.
- Add the onions and mushrooms and cook for an additional 2 minutes.
- Add cream to the potatoes and mash.
- Add other ingredients to the potatoes, mix, and season with salt and pepper.
Instructions (Instant Pot)
- Add a couple of tablespoons of salt to 4 cups of water in the Instant Pot
- Cook at 7 minutes high manual pressure
- Quick pressure release the pressure
- Drain the potatoes
- While the potatoes are cooking, you can cook the onions, mushrooms, and kale in the butter on the stove top. You can also do this with the saute feature on the Instant Pot.
- Add cream to the potatoes and mash
- Add other ingredients to the potatoes, mix, and season with salt and pepper

Once melted, add kale and cook for 3-4 minutes.
Add the onions and mushrooms and cook for an additional 2 minutes.
Add cream to the potatoes and mash.
Add other ingredients to the potatoes, mix, and season with salt and pepper.

What can I do with leftover Irish Colcannon?
Colcannon makes a great topping for homemade shepherd’s pie, and thanks to the generous amount of fat from the butter and cream this actually freezes really well too! If you can, divide up your leftovers in an ice cube tray. When frozen solid, remove from tray, and place in a freezer safe bag. This will help reduce the defrosting time.

Absolutely! You have a few different options when it comes to reheating. You can cover it up and place it in the microwave for a couple of minutes.
