Easy Chunky Guacamole Recipe

I love a good guacamole!

I believe that fresh is always better than store bought and that is certainly the case with this famous side dish.

Nothing beats the taste of fresh ingredients combined together to make something delicious.

I used to be intimidated by making guacamole.

Yep. Sounds a little silly, right?

Maybe it’s because it’s often the star of the dish that I worried it wouldn’t turn out, but once I gave it a go- I was pleasantly surprised at how not hard it really is!

What can I serve with chunky guacamole?

Guacamole is one of those side dishes that you can add to any Mexican style entree. Just throw some chips on the table and call it an appetizer!

You can also add a scoop of gauc to so many delicious dishes: enchiladas, burritos, taco soup- just to name a few!

Substitutions

This is a pretty basic recipe with fresh ingredients that make it what it is.

However, feel free to add or omit anything you do or do not like. I personally think this flavor combo is winning so if you change it up- come back and let me know what you think!

If you don’t have roma tomatoes on hand, I will say I have been known to use cherry tomatoes or large tomatoes before- just make sure you dice them up really small!

I also prefer purple onion in my guacamole- the flavor seems to pair better but if in a pinch- any onion will do!

FAQ

How long does guacamole stay good for? It should stay good for 1-2 days if covered in an air tight container in the refrigerator.

Can I double this recipe? Yes!

How far ahead can I make guacamole? Guacamole is best made and served right away, but if you need to, it can be made up to one day ahead of time for optimal freshness.

Can you eat guacamole once its turned brown? The flavor won’t be great and it is probably on its way to being rotten at that point, so I wouldn’t.

Should you refrigerator avocados? Nope, at least not at first. If you use part of one you will then want to put the remaining avocado in the fridge.

How long can guacamole sit outside of the fridge? Please do not let your guacamole sit out for longer than 2 hours. After this time frame bacteria will start to grow.

Ingredients

  • 2 avocados- pitted and mashed
  • 1 Roma tomato – diced
  • 1 tablespoon minced garlic
  • Sea salt- to taste (We LOVE Redmond’s Sea Salt!)
  • Juice of one lime
  • One small bunch cilantro- chopped small
  • Chopped Onion – to taste

Instructions

Slice your avocados and spoon out the middle into a medium sized bowl.

Use a fork to mash together until it is the consistency you want.

Add your diced tomato, onion and minced garlic.

Carefully mash together until combined.

Add lime juice slowly- taste to make sure it’s the flavor you want.

Sprinkle with salt and add desired amount of cilantro.

Serve immediately

I love guacamole, but am the only once in my present family that does, which means I don’t get to enjoy it as often as I like because I have to cut the recipe way down or throw it out after it quickly goes brown. Well, not ago, I was told to add the juice of half an orange to the recipe. It keeps the guacamole from going brown! Not forever, but certainly longer than without adding It. I know it sounds crazy, but it works!
