You can use fresh potatoes instead of frozen hash browns if you would like. You’ll need to shred the potatoes to be like hash browns, then put the shreds in a bowl of cold water. Then you’ll stir, drain, add more water and repeat a few times to remove the starch from the potatoes. After drying the potato shreds, you can then layer the potatoes and continue the recipe.
For this recipe, I prefer the frozen hash browns because it is much easier and saves time while still tasting relatively similar, but feel free to personalize this recipe however you like.

These potatoes are really good when paired with any kind of classic comfort food and meat like ham, turkey, steak, and chicken. These are also great with other vegetable dishes. You can really have this with anything or even by itself.

- 1 white onion, sliced
- 2 cans cream of mushroom soup
- 1 cup half and half
- 1 cup Triple cheddar shredded cheese
- Salt and pepper

- Add shredded hash browns to pan.
- Layer with the sliced onions, them cream of mushroom, half and half, salt and pepper, and then cheese.
- Baked at 400 for 30 min covered and 20 min uncovered.
