So when I decided to make mashed potatoes with cauliflower I knew it had to be in the instant pot. Is there even any other way? Well, there is but it won’t be as easy as this!
What I love about these is that they are keto cauliflower mashed potatoes so it makes me feel like I’m making a healthier choice. We all know faux mashed potatoes are kind of the rage right now so I knew I had to jump on the bandwagon anyway and I’m glad I did.
These are buttery, soft and flavorful and such a great alternative to potatoes.

Substitutions
Mashed cauliflower is best when fresh cauliflower is used. However, you can use frozen just know that it might make the consistency more mushy.
Using half and half is the magic ingredient to make these rich and creamy but you could use milk instead.
If you don’t have a potato masher or a hand mixer to mash the cauliflower you can use a food processor, wooden spoon or a large cup to mash it with.
Ingredients
- 3 cups cauliflower florets
- 1/3 cup half and half
- 1/4 cup butter
- salt
- pepper
- garlic powder
Instructions
Add one cup of water to the bottom of Instant Pot.
Place 3 cups of cauliflower florets into an Instant Pot steamer basket.
Place lid on Instant Pot.
Set Instant Pot to manual high pressure for 1 minute.
Once the timer goes off, quick pressure release all the pressure.
Take the basket out of the Instant Pot. Pour water out.
Put cauliflower into the pot of the Instant Pot.
Mash with a potato masher. For a smoother consistency, use a hand mixer.
Add half and half and butter and mash until desired consistency.
Add salt, pepper, and garlic powder to taste.
